Dish 2: Chicken Peanut Noodles

SUMMARY

Chicken peanut noodles are exactly what they sound like: noodles cooked with peanut flavoring and chicken. Traditionally an Asian dish prevalent in both Thailand and China in particular, these noodles are the perfect combination of flavors. This dish is an excellent representation of Thai food and typical cuisine. These noodles are usually served as part of the main course, as it is a full dish. The chicken is mixed with peanuts to enrich the flavor, because in Thailand peanuts are extremely accessible and popular in cuisine, highlighting how location and land can influence food culture in countries.

RECIPE

Ingredients: 1-1/2 pounds boneless skinless chicken breasts, cut into 3/4 inch cubes, 1 medium onion, chopped, 3/4 cup salsa, 1/4 cup creamy peanut butter, 2 tablespoons black bean sauce, 1 tablespoon reduced-sodium soy sauce, 8 ounces uncooked linguine, 1 tablespoon canola oil, 1/2 pound sliced baby portobello mushrooms, thinly sliced green onions for garnish

Instructions:  

  • Place the chicken and onion in a 4-qt. slow cooker

  • In a mixing bowl, combine: 

    • Salsa

    • peanut butter

    • bean sauce 

    • soy sauce

  • Add mixture to slow cooker 

  • Cook, covered, on low 2-1/2 to 3-1/2 hours, until chicken is tender

  • Prepare pasta according to package directions while waiting

  • In a large skillet, heat oil over medium-high heat

  • Add mushrooms; cook and stir until tender, 6-8 minutes

  • Drain pasta; stir into slow cooker. Stir in mushrooms

  • If desired, sprinkle with green onions

REFLECTION

Overall, this dish was really fun to make. I love noodles of every culture, and I think the peanut added a pop to the flavor that made this taste extra good. It was a little bit challenging to do the prep, because it took me a long time, but I pushed through and once I got to the actual cooking part it was a lot easier because all I had to do was check on it in the slow cooker and make a pot of spaghetti. I would definitely eat and make chicken peanut noodles again because it was a cool experience and good food. I think the flavor of the chicken combined with the peanut flavor is very interesting and a creative way of using the chicken in their food.
